Take a healthier spin on Rocky Road this festive season. These little rolls provide a source of fibre and wholegrains to keep you satisfied. They can be served as a dessert (added to some custard or ice cream), or placed in a jar and given as a festive gift or accompany any Christmas festivity.
- 2 weetbix
- ¼ cup almond meal
- ¼ cup desiccated coconut
- 2 medjool dates or pitted dates
- 2 tbsp Coco2 chocolate spread
- ¼ cup walnut
- ¼ cup dried cranberries
Add all of the ingredients (except the walnuts and cranberries) to a blender or food processor, and blend until well combined.
Add the cranberries and walnuts. Blend slightly until roughly chopped to ensure the textured rocky road effect.
Roll into teaspoon sized balls and keep stored in the fridge or freezer.
